@distel obv i dont know this exact persons setup but it strikes me as a very normal kind of out of touch for even a completely broke person who works in food to be lol

@distel besides the obvious heat sources (running the stoves and ovens all day adds up!), walk in fridges produce quite a bit of heat in the process — I’ve never been in a commercial kitchen thats cool enough to wear more than a teeshirt even in winter and that was never because the owners were willing to pay for heating (if they had we’d have begged them to spend it on more fans and AC instead haha)

@ljwrites i also often find a cleaner space helps me concentrate better bc it reduces distractions / the amount of sensory filtering i have to do, also

though i don’t always have the energy to pre-clean before big projects as much as i’d like

@pamela my go to for mac and cheese has always been frozen peas but apparently that ones divisive? i also like to put tony’s creole seasoning on, and usually also a bunch of dried thyme

for ramen, if you’re boiling/microwaving it (as opposed to cup noodle type preparations) you can cut winter greens (kale, collards, chard, etc) up into thin strips and cook them in the water with the noodles (maybe put them in a few minutes earlier than the noodles). Frozen snow peas or sliced bell pepper can also be dumped in, let the water back come up to a boil and then add the noodles. i also often cook jammy yolk eggs in with the noodles on the stove but i don’t know about microwaving for those?

once its cooked, i love to dump lots of sesame seeds on top either on their own or as shichimi (7 flavor blend) as well as stirring in sesame seed oil, ginger/garlic paste, miso, etc
