Usually if i’m using butter, i’ll add herbs (mostly thyme) otherwise garlic cloves that have been poached in olive oil (and then using the oil as the fat for the mashing)

I also tend to leave the skins on the potatoes when I mash, which makes it a lot less bland

Colcannon (mashed potatoes mixed with a winter green) is also good
