Looking for recommendations on either books or websites that have quite serious, para-professional baking recipes. I generally like stuff from Serious Eats (Stella Parks et al), and generally speaking I like recipes that pay attention to weight and hydration percentage and so on.

Usually I find stuff in the genre of shortcut recipes for busy parents -- which to be clear are perfectly fine but not what I'm looking for!

@darius Rose Levie Baranbaum’s bread bible is fairly comprehensive and well tested. It was published in 2003 so no Tangzhong method milk breads, or the modern ultra high hydration sourdoughs but for any classic bread recipe it’s my preferred source

@darius if you’re looking for good sourdough recipes, Hamelman’s Bread is very well regarded as well. I think it’s on its 3rd or 4th addition now?
