@vaporeon_ its a cheese made in Spain from the milk of a Manchega sheep, a sheep breed from La Mancha. the cheese must be aged for at least 60 days (the expensive ones are aged for years).

its usually white, a bit firm and most people who try it say it has an umami and nutty taste

The Spanish government is heavily protective of the "Mantego" name so even when massed-produced it tends to be of decent quality
