things you say when you're living with a roommate/not with your parents for the first time:

oh also just as a general thing: how do you feel about soup?
i feel like i could get into soup
i could have a soup era

@monorail seek me for my arcane stocks and powerful broths ms. monorail

@The_T @monorail 1. ok so the salt makes it fuck nasty but watch out

  1. most likely scenario is you are adding too much salt/salt based ingredients and then reducing it too much, either add less salt or more water to dilute the stock

  2. compensate for using less salt by using more herbs and spices (e.g. rosemary and thyme for irish chicken soup)

Follow

@The_T @Breakfast @monorail anyway a reasonably easy soup is:

  • dice onion, celery, carrot (or buy pre-diced from the produce aisle)
  • dice potato into little chunks. you can leave the skins if you want to save time, they're good for you
  • put onion celery carrots in at least a quarter cup of olive oil. (Or any other oil. Or at least 4 tbsp of butter.) don't be shy, fat carries flavor
  • sautee the veggies for at least five minutes. The onions should get translucent, or if you're patient cook them until some get a touch of brown on the edges
  • throw in some concoction of spices. any combination of oregano (1 tbsp or so), thyme (1 tbsp or so), rosemary (1-2 tsp or so), and bay leaves (3-4 if they're the size of your thumb, 1 if they're big as fuck). if you can mince garlic add at least four minced cloves with the precious spices, otherwise add at least 1 tbsp of jarred garlic. Stir all this around very quickly for no longer than 45 seconds.
  • add water (or any unsalted beef/chicken/vegetable broth/stock from the grocery store). scrape the bottom of the pot with a mixing spoon to ensure no spices stuck to the bottom from the previous step
  • add a shitton of black pepper. If you like spicy add a 1/4 tsp of cayenne. Add some salt. Bring to boil then let sit for 10-15 minutes, stirring occasionally
  • add 2 tbsp of vinegar (or 1 squeezed lemon, or refrigerated lime/lemon juice, or any variety of vinegar). Taste the soup and add any additional black pepper, salt, vinegar, and cayenne until it's tasty
  • yum

@wallhackio @Breakfast @monorail if I'm gonna through all this effort I think most of these ingredients would be better in curry

I actually have doubts I can find Japanese curry cubes in any store around here...

@The_T @wallhackio @monorail golden curry is pretty easy to get at a lot of places iirc

@The_T @Breakfast @monorail I've never had trouble finding curry cubes from the international isle in grocery stores but I don't know how Canada rolls

@wallhackio @Breakfast @monorail it's weird. I literally go to 4 different stores to get all the things I want. There is an Indian grocery near by but I'd bet everything there would be too spicy...

@The_T @wallhackio @monorail so there is an entire range of curry intensities in south asia, I'm sure the shop owner would be happy to connect you

tikka masala or butter chicken tend to be the quintessential white people curry

@Breakfast @wallhackio @monorail I think even butter chicken might be too much for me.

I really liked Japanese curry because it was just... I won't say sweeter, but like. Very detached from curry expectations.

@The_T @wallhackio @monorail japanese curry is indeed like very reserved

I reckon a korma would probably sort you out

@The_T @wallhackio @monorail ok so I am not an expert on curry but I promise they can find somethign to sort you out
