Made a chimichurri style sauce out of garlic mustard!
First time working with this plant and making a sauce like this but I like it. Its definitely more bitter than I'd ideally like, but it lends itself nicely to fatty heavier things like potatoes or meats.
Garlic mustard is an invasive plant in my area. This is my first year getting to know it since there's a ton on the farm I'm working on

@sunflower_avenue nice! i think typical advice for foraging garlic mustard is that younger plants are less bitter but i think i found when i tried that blanching also reduced the bitterness a bit if it’s a dish where that wont cause issues

@Satsuma I blanched them a bit which might have helped. But I was definitely later than is ideal for foraging them! Some of them had already started budding (but no flowers yet).
