I've made these cookies a bunch of times and they're delicious. I especially like how the burnt sugar taste of the coconut sugar mimics the taste of s'mores, but if you mix the marshmallows into the dough, they melt in the oven and your cookies become craterous ruins. I don't know how the Minimalist Baker gets around it (selective photography??), but I've solved this by sticking the marshmallows on TOP of the cookies prior to baking.

@runpunkrun the NYT has a marshmallow cookie recipe i’ve been meaning to try ( https://cooking.nytimes.com/recipes/1024782-mexican-hot-chocolate-cookies ) which recommends freezing the marshmallows solid to reduce the melting issues. So perhaps they do something similar for their photos? Tho why not just include it in the recipe as a tip in that case….
