Directors who I think would do something interesting* with a film adaptation of The Odyssey:

Werner Herzog
David Lynch
Ridley Scott
Denis Villeneuve
Quentin Tarantino
Guillermo del Toro

*Interesting does not necessarily mean "good," though it does mean "worth watching, even if only to see what bull shit they did"

Werner Herzog: Odysseus is a tortured soul plagued by memories of the horrors of the Trojan War. There are very few action scenes, all of the monsters have been turned into highly metaphorical dream sequences. Long takes of the ship sailing the Aegean which are probably all practical.

David Lynch: Would make the dream sequences in Herzog's film seem pedestrian and straightforward. The journey is entirely inward but possibly also actually happening. The witch Circe turning the crew into pigs takes like 10 full minutes.

Ridley Scott: Nerds (derogatory) would be extremely upset at how historically accurate this one isn't but everyone else would be too busy enjoying the visual spectacle. Definitely the most traditional Odyssey film but in a comfortable way.

Denis Villeneuve: The most accurate to the text of the myth with few but effective deviations. Even more visually striking than Scott's but in a more challenging way.

Quentin Tarantino: What if The Odyssey was just nonstop gonzo bullshit? Probably opens on Odysseus killing Penelope's suitors. The witch Circe is definitely dominatrix-coded in this one. If any were going to eschew an historical aesthetic, it would be this one, but that's not a sure thing.

Guillermo del Toro: Discerning readers know this would actually be the best one. The best creature effects you've ever seen. Polyphemus gets a sympathetic backstory. Scylla and Charybdis would be so well-done it would forever change you how imagine them. He somehow works a "Kill every fascist you see" message into a story written thousands of years before fascism was invented.

This puts Christopher Nolan at number 7, I guess.

Not sure who else I would pick to round out a top ten

@Lady It would have to be a Mad Max universe movie, I think, but also that would be incredible
