OHHHHHH the thing that makes pineapple eat your mouth when you eat it is a form of protease! that makes so much sense!!!! I understand so much more about enzymes as a category since my laundry-related research spiral.

also: heat denatures the protease in pineapple, which is why barbecuing your pineapple is so nice. it's not something unique about the barbecue process, it's literally just the heat. this explains SO much.

ALSO pineapple as an ingredient in meat marinades makes sense! but I'm laughing, bc I bet a lot of ppl just use canned pineapple (or canned pineapple juice) for that, bc it's what's easiest to get and to use. but canning safety involves heat, so the protease in denatured, so it doesn't do anything special in your marinade to tenderize your meat 😂

@soph_sol barbecuing pineapple does also caramelize the sugars a bit which is *also* delicious, so its worth doing even if you aren’t bothered by protease or the enzymes have already otherwise been denatured

@Satsuma oh yeah for sure! I just don't have a barbecue. whereas just cooking pineapple (including caramelising the sugars!) is doable even on a stovetop!
